Stumbling on facts that I didn't know still happens, even in my dotage. This one is courtesy of notalwaysright.com.

I never knew that "whole milk" had only 4% fat content. Of course, it makes sense it wouldn't have 100% fat or else milk would be a gelatinous mass of...fat.

So the popular 2% milk really just has 1/2 the fat. Which is still quite a bit.

Back when my family was in the dairy farm business in Ontario a lifetime ago, our milk revenue was tied to the fat content of the milk: the higher the percentage, the more we were paid.

4-4.5% was the average fat content for Holstein dairy cows, although one might get lucky with the odd cow averaging 5-6%. In general, the fat content would spike for a couple of months immediately after calving, then gradually return to the cow's normal levels as the calf was weened.
